Recipe: Healthy Substitute for Banana Pancakes

I’ve been making this recipe now for about five years and it’s one of our favorites! It’s simple and you only need two ingredients. It’s very similar in taste to banana pancakes so it’s a nice healthy treat and easy to make.

Chase wasn’t a fan of eggs on their own so I started to make this for him and now it’s one of his favorite breakfast meals. I started feeding Chase this recipe at the age of eight months but all babies are different. Banana’s provide a good source of vitamin B6, Vitamin C, and potassium all in which are great for a growing baby!

Prep time

From prep to table, banana pancakes take about 10 minutes.

What you’ll need (serves 1)

  • 1 Banana

  • 1 Egg

Cooking Instructions:

  1. Mash up a banana in a large bowl.

  2. Crack one egg into a bowl and mix together till you have a consistent banana-egg mix.

  3. Add mix to a pan on medium heat (we use a non-stick pan and add a coconut oil spray to the pan) and cook for about five minutes or until desired preference.

  4. You can also add chocolate chips or nuts to the mix once it’s cooked to give it more of a banana pancake vibe.

  5. If you have patiences, you can also flip the batter so it looks like a pancake. I prefer the mash look because it’s easier for me with a hungry toddler crawling around my feet.
