Recipe: Healthy Taco Salad
Spice Up Your Salad Game
As someone who tries to lead a healthy lifestyle, it might surprise you to know that I’m not a big fan of salads. BUT, I’ll eat taco salad till the cows come home! It’s easy to make, super yummy, and best of all, it’s healthy!
From prep to table, taco salad take about 25 minutes.
WHAT YOU’LL NEED (Serves 4)
1 bag of beyond beef or 1 lb of grounded turkey (whatever your choice of protein is)
1 tbsp chili powder
1/4 garlic powder
1/4 crushed chili flakes
1 teaspoon of salt and pepper
1 red pepper
1/4 red onion
1/2 can black beans
1/2 red tomato
2 ripe avocados
Handful of tortilla chips
Chop up all your vegetables and whatever other vegetables you’d like to add to the salad and put to one side.
Wash and dry your spinach and dish out on to your serving plates. Then add your vegetable toppings.
To make your guacamole, mash two avocados in a small bowl. Add one tbsp. of lime juice, 1/4 cup of minced red onion, diced red tomato, and a dash of salt and pepper.
In a medium bowl, blend your seasonings (chili powder, paprika, garlic powder, cumin, crushed chili flakes, salt and pepper) together. Then, mix in the egg to the spice mixture.
Add your protein to the spice mixture and stir until it is a consistent color.
On medium heat, grease a large skillet using coconut oil and add your red onions to caramelize them.
Once the onions are golden brown, add your protein and cook through till your meat is brown in color (use a wooden spoon to chop into the meat to be sure everything is cooked thoroughly).
When protein is fully cooked, add to the awaiting spinach on your plates. Top your salad off with the guacamole and a squeeze of lime juice. (I use lime juice as salad dressing, but you could add an alternative dressing like chipotle or a salsa for more flavor).
Sprinkle tortilla chips over top to finish off the salad and serve!
